This healthy homemade granola recipe is a quick, easy, and comes together in just 20 minutes, including cleanup. Perfect for busy mornings when you want something wholesome, crunchy, and satisfying without spending too much time in the kitchen.
Made with hearty oats, crunchy nuts, warm cinnamon, and naturally sweet, dried fruit, this granola is full of texture and flavour. It also keeps well throughout the week, making it ideal for meal prep and easy grab-and-go breakfasts.

Ingredients:
3 cups rolled oats
2/3 cup roughly chopped nuts (pistachios, walnuts, almonds)
1 tbsp light brown sugar
1 tsp cinnamon
¼ cup of coconut oil
1/4 tsp salt
1 tsp vanilla extract
2/3 cup dried fruits, finely chopped
Method:
Preheat your oven to 210℃ \ 190℃ fan \ 410 ℉ \ Gas 6
In a small bowl, combine the coconut oil, sugar, cinnamon, and vanilla. Microwave for about 30 seconds, until the coconut oil melts and the mixture becomes smooth and well combined.
In a separate bowl, combine the oats and chopped nuts.
Add the spiced oil and rub well using your hands, making sure the oats and nuts all well coated.
Spread the oats mixture evenly on a baking sheet aligned with baking paper.
Bake in the preheated oven for 8 minutes. Remove from the oven, stir the oats, spread them out evenly again, and bake for a further 5 minutes.
Remove from the oven and immediately stir in the chopped fruit, mixing everything well to combine.
Allow to cool for 20-25 minutes.

- 2/3 cup Dry Fruits, Finely Chopped Apricot, Cherries, Cranberries – Whichever you fancy
