Healthy Homemade Granola

Start your day with this healthy homemade granola - crunchy, wholesome mix of oats, nuts and fruits baked to golden perfection. Easy to customise and packed with fibre and goodness, it’s perfect for breakfast, snacking, or topping yoghurt and smoothie bowls.

  • 3 cups Rolled Oats
  • 2/3 cup Nuts, Roughly Chopped Pistachios, Walnuts, Almonds - Whichever works for you
  • 1 tbsp Light Brown Sugar
  • 1 tsp Cinnamon
  • ¼ cup Coconut Oil
  • 1/4 tsp Salt
  • 1 tsp Vanilla Extract
  • 2/3 cup Dry Fruits, Finely Chopped Apricot, Cherries, Cranberries - Whichever you fancy

Instructions
 

Method:

  • Preheat your oven to 210℃190℃ fan410 ℉ Gas 6
  • In a small bowl, combine the coconut oil, sugar, cinnamon, and vanilla. Microwave for about 30 seconds, until the coconut oil melts and the mixture becomes smooth and well combined.
  • In a separate bowl, combine the oats and chopped nuts.
  • Add the spiced oil and rub well using your hands, making sure the oats and nuts all well coated.
  • Spread the oats mixture on a baking sheet aligned with baking paper, in a thin as a possible layer.
  • Bake in the preheated oven for 8 minutes. Remove from the oven, stir the oats, spread them out evenly again, and bake for a further 5 minutes.
  • Remove from the oven and immediately stir in the chopped fruit, mixing everything well to combine.
  • Allow to cool for 20-25 minutes.
