Pan Roasted Nuts

Growing up my parents’ home always carried the fantastic, fragrant and sense awakening, cooking atmosphere. My mom loves to spend time in the kitchen cooking up some old dish or baking some fresh cookies, ‘Just in case we have any visitors’. And indeed, there were always visitors, and off course there was always welcome spread of goodies awaiting them.

I am proud to say I have inherited my parents love of entertaining, and I have always tried to make my own home as welcome as they’re is. However, having a career in IT meant I had very little time to spend in making goodies.

These nuts were THE answer. They are a great snack, crunchy and delicate, with a combination of sweet and hot flavours. They are my wonderfully delicious way of having a great treat for entertaining, or just a yummy snack for us to nibble on, and they take no time at all to make. Only problem with them – they’re addictive.


500 gram assorted nuts
50 gram unsalted butter
1 tbsp cayenne pepper
1/4 cup brown sugar
1 tbsp cinnamon
1 tsp all spice
2 tbsp sea salt
1 tbsp honey


In a wide pan, melt 10 gram of butter with some olive oil, and roast the nuts for couple minutes. Shaking the pan to prevent the bottom ones from burn.

Melt the rest of the butter in a microwave bowl, add the honey, sugar and spices and mix well.

Pour the spiced butter mixture into the pan, swirl the pan to mix.

The mix is sticky and require a constant swirling of the pan until all nuts coated.

set aside to cool completely. Store in airtight jar.


Don’t be afraid to be adventures with your favourite flavours, most spices will work well here.

For extra kick add some chilli flakes.

Make sure to use non salted, non-roasted nuts.
