Ingredients:
750 gram ground beef.
500 gram ground lamb.
1/4 cup honey.
1/4 tsp all spice.
1 tbsp paprika.
1 tsp cumin.
3 cloves crushed garlic.
3/4 tbsp fine salt.
1 tsp black pepper.
1 tsp baking soda.
1/2 tsp cinnamon.
1/2 cup mushrooms.
1 large onion.
1/2 cup finely chopped nuts.
1/2 cup finely chopped dry fruits.
3-4 large mint leaves, finely chopped.
Method:
Heat 1 tablespoon of olive oil in a frying pan over medium heat. Add the onion and mushrooms, season with a small pinch of salt, and sauté until softened and lightly golden. Remove from the heat and allow the mixture to cool completely.
Once cooled, chill the onion and mushroom mixture in the fridge for a short while, then pulse in a blender until finely chopped.
In a large mixing bowl, combine the ground beef, lamb, honey, spices, garlic, nuts, dried fruit, mint, and the finely chopped onion and mushroom mixture. Gently mix everything together using a wooden spoon until just combined. Try not to overmix, as this helps keep the burgers light and juicy.
Divide the mixture into large equal portions and shape into balls. Flatten each one into a patty roughly 2 cm thick. Place the patties onto a tray lined with aluminium foil and refrigerate for 30 minutes to help them firm up before cooking.
For evenly shaped burgers, I like to use large round cookie cutters when forming the patties.
Cook the burgers on a well-heated skillet or barbecue for about 4 minutes on each side, or until beautifully browned and cooked through.
Tips
Adding a little baking soda helps create lighter, more tender patties while also helping them hold together beautifully.
Finely chopped dried fruit adds a subtle sweetness that perfectly balances the richness of the meat and spices.
If preferred, you can use only beef instead of a beef and lamb mixture. Just make sure to use beef with a slightly higher fat content, as the extra fat helps keep the burgers juicy and full of flavour.
For extra moisture and flavour, lightly brush the patties with a little mustard or mayonnaise before grilling.
