Bananas in Caramel Soup

I first tried this most delightful dessert in an Irish pub in Tel-Aviv years ago and absolutely fell in love with it, the wonderful combination of hot caramel sauce and cold ice-cream, the soft bananas and crunchy meringue were just heart warming.

It took me few years to reach the desired result at home, but once I did it very quickly became my most favourite dish, especially at wintertime, particularly because of how easy it is to make.

This is a very simple, quick recipe that results in a great flavoured dish that will not only be your best new comfort food but is a true soul warmer.


Serves 2

1/4 cup homemade salted caramel sauce
1/2 cup double cream
1/2  cup whole milk
2 large bananas, thickly sliced
2 large ready bought meringues


In a saucepan, on medium heat, warm the caramel with the milk and cream, stir until all melted and bring to a gentle boil.

Once boiled, turn the heat off and add the sliced banana, swirl the pan until all the banana slices are well coated with the caramel soup.

Crush the meringues into very rough pieces and lay on the bottom of a bowl, pour the banana and caramel soup on top until all covered and top with some ice-cream.


For extra crunch top the ice-cream with broken nuts.

For extra warmth add a pinch of cinnamon to the soup when cooking the cream and milk.

For deeper flavour and a gorgeous coffee scent – add 2 tbsp of  espresso drink. 

Try replacing the bananas with apple slices (Bramley apples work best here)
