Nutty, Fruity Granola


Breakfast was always considered to be the most important meal of the day, a break-fast after a goodnight sleep and a great kick-start to a new day.

Truth to be told, I am not a morning person, and as such I very rarely have breakfast and if there is anything that can seduce me to bite in, is a nice granola toped with fresh fruits and some yogurt.

This is my own version of granola, homemade and full of little pieces of goodies – fruit and nuts. It is a real treat to open the morning with and a true delight to snack on any other time of the day. Just top it with yogurt and some fresh fruits and you’re good to go!

Ingredients:

1 hip cup sorted nuts (I used pecans, pistachio & almond)
3 cups rolled oatmeal
1 tbsp caster sugar
1 tsp cinnamon
150 gram butter
1 tbsp coconut oil
1/3 cup brown sugar
1 tbsp maple syrup
1/4 tsp salt
1 tsp almond extract
1 cup sorted dry fruit (anything you like – all works)

Method:

Preheat your oven to 200℃ degree \ 400℉ \ Gas mark 6. 

Combine oats and nuts together.

Melt 50 gram of the butter, mix with caster sugar and cinnamon (I also added chopped almonds)

Pour the butter mixture onto the oats and nuts mixture, mix well until all is covered in butter and shiny.

Spread the oatmeal mixture on a baking pan aligned with baking paper, bake for 5 minutes in the mid rack of the oven.

Chop the dry fruit to small dices. 

Melt the rest of the butter with the coconut oil, brown sugar, maple syrup and almond extract. Add the diced fruits into the pan and allow to boil. 

Pour the mixture into the oats mixture and mix well to thoroughly combine. Spread the all mixture back onto the baking pan.

Bake the mixture for 6-7 minutes in the mid rack of the oven or until golden.

Set to cool completely, then break down to small clusters with a fork.

Tips:

Store in a airtight container in a dry place.
