I love zucchini, I find it super flavourful when fried or seared with just a pinch of salt, it is definitely a vegetable worthy of the attention. Much like aubergine, but that’s for another post.
This is a whole pure zucchini pie, no crust dough needed. Easy and simple to make, with a great and delicious result.
1 tbsp butter
1 cube parsley
1 crushed garlic clove
3 large zucchini, finely chopped
1/2 cup double cream
Pinch of ground nutmeg
Salt & pepper to taste
1/3 cup grated cheddar
1/3 cup crumbled feta cheese
Preheat your oven to 180℃ \ 160℃ fan \ 350 ℉ \ Gas 4
In a large pan melt the butter, parsley cube and garlic, add the chopped zucchini, season with salt and pepper to taste, and saute until soft. When all softened set aside to cool.
Beat together eggs and cream, season with salt, pepper and a pinch of nutmeg. Add the cheddar and feta cheese and the chilled sauteed zucchini.
Oil a 25×25 cm pan well, pour the zucchini-cream mixture in.
Bake in preheated oven for 20-25 minutes, until golden and springy to touch.
