Kiwi and Orange Sweet and Tangy Jam

This amazing, multi-versatile kiwi and orange sweet and tangy jam was born of childhood memories, allow me to tell you how this came to be.

Growing up in a sunny country we had plenty of fruits and vegetables incorporated into our diet. So, whatever we did and wherever we were, there was always one or the other in anything we eat. And whilst summer was never a problem, winter collection was a bit more modest.

For me, the best winter had to offer were kiwis and oranges, two fruits that somehow always reminded me of summer. With their bright and vibrant colours and juicy flesh, kiwi and oranges always made it feel a bit sunnier.

These days you can find any fruit you crave any time of the year and kiwis and oranges are no longer winter visitors. So, what do you do when you have two favourites of yours available all year long? You create a whole lot of kiwi and orange based new recipes and this is one of them (another be my soft and delicious kiwi and orange sponge cake)

This jam combines the unique tangy flavour of the emerald kiwi with the sweetness of the fresh bright orange and boy do they work well together.

Ingredients:

350 gram kiwi, peeled and quartered
2 large oranges, fillet
¼ cup caster sugar
¼ tsp salt
1 tsp cornflour

Method:

In a saucepan mix together fruits and sugar and bring to a boil.

Turn the heat to medium-low and allow to simmer for about an hour, until the fruits looks soft enough to mush.

In a separate bowl melt 1 tsp of cornflour in 1 tbsp hot water, stir well until all has dissolved.

Transfer the fruits mixture into a blender, add the melted cornflour and blitz until all combined and the mixture resembles a smoothie texture.

Return the mixture to the saucepan and bring to a second boil while stirring constantly.

When the jam mixture feels thick to stir, turn the heat off and leave to cool completely.

Store in a sterilised jar in the fridge for up to three months.

Tips:

For a slight kick add a pinch of black pepper, or a pinch of cinnamon for extra warmth.

For extra crunch add 1/4 cup of chopped walnuts to the saucepan after the mixture as cold down.

You can use the final product as cake filler, dessert topping or as add-on for smoothies.
