Crispy Potatoes Wedges

My husband and I are big fans of meat, any meat, any time, and at the top of our list are steaks. They are our very favourite, especially accompanied with a good portion of fries. Preferably spicy.

Along the years we managed to come up with a large verity of great potato dishes, and this quick, super yummy recipe is our very favourite one.

Golden wedges that come out of the oven crispy on the outside whilst tender on the inside and are absolutely divine. These are super easy to make, packed with flavour, and complement any main dish beautifully, as well is being great treat on their own.


6-8 medium red potatoes
1 tbsp olive oil
1 tbsp butter
1 tsp sea salt
1 tsp paprika
1/4 tsp mustard seeds
1/4 tsp dry oregano


Wash the potatoes well, as this dish includes skin on.

Set in a large pot and cover with water. Add a pinch of fine salt and bring to a boil.

Warm your oven to 180°C fan \ 400℉ \ Gas mark 6

Lower the heat and cook for extra 8-10 minutes on medium heat. You want the potatoes to be soft enough for a fork to go in, but not to as far as not holding shape when cut.

Line a baking pan with aluminium foil. Spray with half the olive oil and spread half the spices & salt on.

Cut each of the potatoes into eight wedges.

Set the wedges on top of the spiced foil and cover with the remaining oil & spices.

Roast the wedges for 25-30 min until golden.

The foil underneath the wedges will help crisping the wedges on their down side too.


Using sea salt gives the wedges a crackle, don’t give up on it.

These are great with any seasoning, e.g. salt and pepper, chilli flakes, paprika etc. just work your creativity.
