Crispy Crushed Potatoes with Butter and Herbs

These gorgeous crispy and fluffy potatoes were born a while ago whilst looking for a quick and easy side dish to go with my burger.

Yesterday they came out of the recipe box and received a new and easier – believe it or not – twist.

Super easy, quick and with very few ingredients, these crispy on the outside fluffy on the inside potatoes, covered with most flavourful herb-butter, are so yummy they will probably end up as finger food!


Serves 4

1 kg baby potatoes
1 tbsp (15 gram) melted butter
1 tbsp olive oil
2 parsley cubes
1 tsp honey
1/4 tsp crushed garlic
½ tsp lemon juice
½ tsp chilli flakes
Salt & Pepper to taste


Preheat your oven to 200℃ \ 180℃ fan \ 400℉ \ Gas mark 6.

Scrub the potatoes clean with a potatoes brush. Cook the clean potatoes in boiling salty water for circa 20 min, until a fork goes through easily.

Set aside to cool.

In a small bowl mix together butter, oil, spices, honey and lemon juice.

Warm the mixture up in the microwave for 30 seconds to allow all to melt and mix.

Spread the chilled potatoes on a baking pan lined with baking paper, crush them with a meat hammer or the back of a spoon.

Pour the butter-spices mix on top of the potatoes, making sure they are all covered.

Bake in the oven top rack for 15-18 minutes, until starting to colour on the edges.
